I think most of us as kids have been used to single or double cooked, it has always worked for me although the quality of spud, oil and cooking pan is important. Interested to know what Phil's triple cooked actually means as one way is relatively quick and another is quite time consuming. Will look forward to trying when I am hopefully in town in August.
